Italiano: Alla burraia

La burraia è il locale dove si produceva il burro o, più in generale, adibito alla lavorazione del latte. Si tratta una costruzione rurale edificata nelle zone di pascolo lontane dai paesi o dalle abitazioni dei pastori, quando non era possibile trasportare il latte velocemente per la lavorazione. Le burraie venivano costruite nelle zone di alpeggio in prossimità di sorgenti o corsi d'acqua e la costruzione garantiva una bassa temperatura interna. Come burraie a volte venivano utilizzate le grotte. Spesso una Burraia era condivisa tra più pastori che si organizzavano in turni per l'utilizzo e la manutenzione della burraia stessa. Camminando in campagna od in montagna si possono trovare anche frequentemente le burraie, ormai abbandonate da tempo e sempre più diroccate.

The burraia is the place where butter was produced or, more generally, used for the processing of milk. It is a rural construction built in the grazing areas far from the villages or the shepherds' homes, when it was not possible to transport the milk quickly for processing. Burraie were built in the mountain pasture areas near springs or streams and the construction guaranteed a low internal temperature. Caves were sometimes used as burraie. Often a burraia was shared between several shepherds who organized themselves in shifts for the use and maintenance of the burraia itself. Walking in the countryside or in the mountains, one can also frequently find burraie, now abandoned for some time and increasingly in ruins.
