Italiano: Alla burraia
The burraia is the place where butter was produced or, more generally, used for the processing of milk. It is a rural construction built in the grazing areas far from the villages or the shepherds' homes, when it was not possible to transport the milk quickly for processing. Burraie were built in the mountain pasture areas near springs or streams and the construction guaranteed a low internal temperature. Caves were sometimes used as burraie. Often a burraia was shared between several shepherds who organized themselves in shifts for the use and maintenance of the burraia itself. Walking in the countryside or in the mountains, one can also frequently find burraie, now abandoned for some time and increasingly in ruins. This is under the Sottili, above the cemetery of the capital of Rignano sull'Arno |
