Unfortunately Fogo de Chao pay his employees $5.15 in hours and the rest on tips ...that is the reason can have 25 location in USA ...very sad

Fogo de Chão (Portuguese pronunciation: [ˈfo.ɡu dʒi ʃɐ̃w]) is a fine dining, full-service Brazilian steakhouse or churrascaria. Fogo de Chão currently operates 25 locations in the United States of America and nine locations in Brazil. The name Fogo de Chao means "fire on the ground" and summarizes the traditional gaucho method of roasting meats over an open fire. The company was founded by two sets of brothers, the Cosers and Ongarattos in the countryside of Rio Grande do Sul in 1979. The first United States location opened in Dallas, Texas in 1997. The Brazilian private equity firm, GP Investments, made their initial investment in Fogo de Chão in 2006 and sold its shares to American private equity firm Thomas H. Lee Partners in 2012.

Meals

Lunch and dinner at Fogo de Chão operate the same and consist of the same items, at different prices. There is a fixed price for endless salad bar and tableside meat service. Customers can simply wait for their favorite cut of meat to make its rounds. Each table has one disc per diner, a paper circle with one red side and one green side; when the disc is put green side up in front of (or next to the plate of) a person, the waiters will bring by all of the cuts of meat individually until the disc is flipped to the red side, at which point the diner will be left alone to eat his or her food.

The meal comes in two parts. The first starts at the gourmet salad bar, which offers cured meats, smoked salmon, imported cheeses aged from 1–30 years, vegetables, and salads. The second part of the meal consists of 16 different cuts of beef, pork, chicken and lamb, served tableside. Some of the meats are:

  • Beef ribs
  • Leg of lamb and lamb chops (cordeiro)
  • Pork tenderloin and pork ribs
  • Chicken legs
  • Garlic beef
  • Garlic chicken

Hot side dishes brought out with the meat course include:

  • Cheese bread (pão de queijo)
  • Caramelized bananas
  • Seasoned mashed potatoes
  • Fried polenta

Signature desserts include papaya cream, crème brûlée, tres leches cake, chocolate molten cake, and traditional flan.

The bar features a Wine Spectator-award winning wine list, boasting hundreds of domestic and imported wines. Traditional drinks such as caipirinha and guaraná are also available.

Awards

The restaurant was named as one of America's top restaurants by Zagat Survey.[1] The restaurant has won the Wine Spectator Award of Excellence every year since 2002.[2]
