abstract | The residual stream from the starch preparation from wheat, rye, oats or barley is thickened to a dry matter content of 17 to 25 wt. % after which an enzyme preparation with pentosanase activity from fungi or yeasts is added. The enzyme is allowed to act for 0.5 to 4 hours at a pH of 2.6 to 3.7 and a temperature between 30 and 50 degrees Celsius and the starch fraction is subsequently separated off with an increased yield. The starch thus obtained is a calibrated, fine-grained starch of which at least 90 wt. % of the granules have a diameter of 3 to 12 micrometers |
