abstract | The invention describes a hydrolysis procedure to obtain a powdered dry hydrolyzed food product comprising: adding an acidic solution to a material of plant or animal origin to obtain an acidified paste with a pH lower than 2.0; allowing the acidified slurry to stand to allow hydrolysis to occur; adding to the acidified paste obtained in the previous step a ground vegetable or animal flour with a granulometry such that at least 50% of it has a size smaller than 1 mm; adding an adsorbent excipient to the mixture of acidified paste and ground vegetable or animal flour obtained in the previous step; and letting the mixture of acidified paste, ground vegetable or animal flour and adsorbent excipient rest until the dry hydrolyzed food product in powder is obtained. The invention also encompasses the product obtained by the above procedure. |
