Summary Method for Making a Soft Cake Dough The present application describes a method for making a soft cake dough. It relates to a method for making a soft cake dough comprising at least 40% by weight of cereal material after baking, the method comprising: providing flour, yeast and other ingredients for the soft cake ; forming a fermented dough to mix and grow a portion of flour representing at least 25% by weight of the total flour to be incorporated into the soft cake batter with water and yeast; mixing the fermented dough with the remaining flour and other ingredients to form the soft cake dough comprising at least 40% by weight of cereals after baking. |
