the invention relates to mixed crystals comprising a) fermentation agents and b) 0.1 to 5000 ppmp, in relation to the total amount of fermentation agents, of the crystallization promoters in the form of at least one polymer, wherein, when in use of hydrophilic cellulose derivatives as crystallization promoters, the amount of these is reduced to less than 100 ppmp in relation to the total amount of fermentation agents. the present invention also concerns the production of mixed crystals and their use in the production of baked goods, as regulators of acidity in food, in the manufacture of cosmetic products, in the synthesis and formulation of pharmaceutical products, and as blowing agents in processes techniques such as the manufacture of spongy rubber or for fire extinguishing formulation. the present invention also concerns the production of cooked foods. |
