abstract |
A measured amount of meat is introduced into a first vessel. A measured blen d of alkaline solution is also introduced into the vessel and mixed with the meat so as to ensure the surface of the meat is covered with the high pH alkaline solution. The meat is then stored for a period of time so as to ensure that any bacteria that remains alive and present at the meat surfaces becomes acclimatized to the high level pH. The meat is then transferred into a second vessel and a measured blend of carbon dioxide and water is also introduced into the second vessel. The vessel is operated at a high pressure . The high pressure favors the formation of carbonic acid, which reduces the p H to a low level sufficient to kill microorganisms residing on the meat.</SDOA B> |
