This object aims to provide a yeast which has a high safety, can exerts a high immunopotentiating effect even in the case of being taken as cells, is easily available and less expensive, can be directly employed in producing foods and can be cultured even at a low osmotic pressure, and a food containing this yeast. The yeast is characterized by containing only a small amount of mannan in the cellwall, having an immunopotentiating effect and being capable of growing in YPD liquid medium having an osmotic pressure of 300 m Osm. The above-described yeast is preferably either of Saccharomyces cerevisiae FERM BP-11293 or Saccharomyces cerevisiae FERM BP-11294. |
