The method for extracting the purple skin onion pigment mainly comprises the following steps: soaking and extracting crushed purple skin onions for 3 times by using hot 70-80% medicinal alcohol, concentrating under reduced pressure, freezing in a refrigerator, performing suction filtration to remove water solution, washing by using a proper amount of cold water, leaching by using a proper amount of medicinal alcohol, and drying to obtain a crude pigment extract of the purple skin onions. And boiling and dissolving the crude pigment extract by using medicinal alcohol with the mass being 10-100 times that of the crude pigment extract, filtering out insoluble substances, concentrating under reduced pressure, freezing for 2 hours, separating out a dark purple solid, carrying out suction filtration, washing with cold purified water, washing with a proper amount of medicinal alcohol once, and drying to obtain the purple skin onion pigment (the dark purple solid). The purple-skin onion pigment can be dissolved by a proper amount of purified water and a proper amount of medicinal alcohol respectively to prepare a water-soluble pigment and an alcohol-soluble pigment, and can be widely used in foods, medicines and cleaning cosmetics.
