abstract The invention provides a method for adjusting a malt formula based on the hydrolysis capacity of malt starch, belonging to the technical field of beer. The technical scheme comprises the steps of determining starch hydrolysis capacity coefficients and limit dextrinase activity conditions which are required to be met by malt in the formula according to beer types and requirements of yeast on proportion of fermentable sugar, and adjusting the proportion of the malt in the formula by combining the starch hydrolysis capacity coefficients and the limit dextrinase activity conditions of the malt to obtain the malt formula with stable fermentation degree. According to the invention, the formula meeting the hydrolysis capability of the malt starch in the formula is obtained by establishing a method for accurately predicting the hydrolysis capability of the malt starch and adjusting the proportion of the malt, so that the stability of components of the wort and the consistency of the flavor of beer are ensured.
