abstract The invention provides a bean dreg hydrolysis fermentation process, which comprises the following steps: s1, bean dregs are taken to be sterilized, dried and cooled to room temperature; s2, inoculating Aspergillus niger and Bacillus subtilis on a culture medium for culture, shaking to wash mature spores, filtering, stirring to disperse the spores, and preparing spore suspension; s3, mixing the bean dregs with the spore suspension, putting the mixture into a biochemical incubator for fermentation culture, sterilizing, cooling to room temperature, drying, and cooling to room temperature; s4, crushing the fermented bean dregs, sieving, adding pure water, uniformly mixing, adding papain, performing enzymolysis, adding glucoamylase, performing enzymolysis, inactivating enzyme, adding reducing sugar, reacting, precipitating with ethanol, dissolving in deionized water, and adjusting relative density to obtain bean dreg hydrolysis fermentation liquor. The method has the advantages that the content of active polysaccharide and active small molecular peptide in the hydrolysate is high, the utilization value of the bean dregs is improved, and the effect of reducing blood fat is good.
