The invention discloses a cyclic metal ruthenium complex fluorescent probe and a preparation method and application thereof. The chemical name of the cyclic metal ruthenium complex is phenylboronic acid o-phenanthroline-bipyridine ruthenium complex, abbreviated as [Ru( ppy) 2 (Phen‑B(OH) 2 )](PF 6 ) 2 . The preparation method comprises the following steps: firstly preparing the main ligand of phenylboronic acid o-phenanthroline, then reacting it with a ruthenium bipyridine precursor, and applying a wet method for sample loading and purification. The cyclic metal ruthenium complex fluorescent probe of the present invention can sensitively, conveniently and rapidly detect the concentrations of two antioxidants, PG and TBHQ, in food, and other antioxidants such as BHA and BHT in food have no effect on the fluorescence of the probe. The step-by-step detection of PG and TBHQ antioxidants in food provides a new way for rapid detection of antioxidants in food. |
