abstract Slaughterhouse waste is rinsed in water in stages, pre-frozen to -2 to -5 ° C in the core of the raw material, two-phase ground raw materials to pieces up to 3 mm, followed by intensified separation of non-collagenous proteins and pigments from comminuted raw material by washing with NaOH solution, fat separation by solvent extraction with ethanol + petroleum ether and pretreatment of protein isolate with proteolytic enzyme. After filtration of the protein hydrolyzate and washing of the swollen protein isolate with water, the first phase of gelatin extraction, inactivation of proteolytic enzyme residues, separation of gelatin solution from the residual non-decomposed protein isolate by filtration, second phase of gelatine extraction - multistage extraction of gelatin from swollen protein isolate at temperature increasing in each stage and the formation of gelatin from the extracted solutions and the biotechnological treatment of the remaining non-decomposed fraction of the collagen hydrolyzate.
