Process for the production of starch (11a) from starchy plants, in particular from potato tubers or cassava roots, characterized by the following steps: digestion, in particular by comminution, of starchy plants and release of starch; Separating the comminuted plants into a first starch-rich fraction (1) and a relatively low-fiber fraction (2); High pressure treating the low strength fiber fraction (2) for high pressure cell disruption to release additional starch; and separating the high pressure treated low strength fiber fraction into a second high strength fiber fraction and a second low strength fiber fraction. |
