abstract The invention relates to a method (100) for preserving a foodstuff in a hydrogen atmosphere in a packaging (200) with an interior (220) enclosed by a sleeve (210) that is permeable to hydrogen and can be sealed airtightly, the interior (220) being a food space ( 221) for receiving the food and a hydrogen space (222) for receiving hydrogen gas, the food space (221) and the hydrogen space (222) being connected to one another at least in a gas-conducting manner, and wherein the casing (210) or a hydrogen space (222) surrounding sleeve (230) is dimensionally stable at a negative pressure in the hydrogen space (222) compared to an environment of the packaging (200) of at least 50 mbar. The method comprises at least the following steps: filling (110) the food at least into the food space (221), introducing (120) hydrogen gas at least into the hydrogen space (222), airtight sealing (130) of the casing (210) after filling (110) ) and introducing (120), and generating (140) a negative pressure at least in the hydrogen space (222) with respect to the surroundings of the packaging (200). The invention further relates to packaging for use in a method according to the invention and to such a use.
