abstract |
The present invention relates to protective cultures comprising new types of lactic acid bacteria, which can serve to preserve food or feedstuffs which can only be kept for a limited time even when refrigerated. The protective cultures are able to inhibit the growth of bacteria that are dangerous for the consumer if the cold chain is interrupted or if the prescribed cooling temperature is not observed. Furthermore, food or feed is made available which contain the protective cultures according to the invention. |
