abstract Phosphatide emulsifiers for oil/water or water/oil emulsions in foodstuffs, cosmetics and pharmaceutical prepns. are prepared by partial hydrolysis of natural or modified plant phosphatides or plant oils containing these at a pH of 3-5 and a temp. of 50-100 degrees C with SO2 gas or aqueous solution, or (NH4)2SO3, to give a lyso phosphatide yield of 30-40%. pH is maintained by (NH4)2SO3 or formic acid. The product is purified by vaccum evaporation.
