abstract Gel-forming agent for prodn. of gum-like confectionery of low water-content, esp. hard gum sweets of xerogel-type usually made with gum arabic, consists of waxy starches modified by oxidn. with NaOCl, contg. 0.5-1% COOH gps. and having 30-60 (35-55) Scott-viscosity (50-200g./100 ml.) and pref. used in 30-45 wt.% concn./total wt. Pref. mixt. of modified waxy starch, sugars and water, obtd. at 70-90 degrees C, is boiled in a press. digester at 100-150 degrees C, cast to a moulding powder, while still warm, after addn. of flavouring agents and opt. dyes and dried at 50-60 degrees C to 8-12% water-content to form a xerogel. Modified waxy starches may be partly replaced by other gel-formers, e.g. gum arabic and/or other hydro-colloids, e.g. agar-agar and gelatine.
