abstract | A process for decaffeinating raw coffee comprises adjusting the raw coffee to an elevated water content and then subjecting it to selective extraction with water-contg. liq. CO2 at a press. below the critical press. of the CO2. Pref. the moisture content of the raw coffee is adjusted with water and/or steam to 10-60%, esp. 45-55%. Pref. the CO2 used for the extraction is at least nearly satd. with water and tyhe press. of the CO2 during the extraction is just below the critical press., esp. 65-70 bar. The extraction temp. is below the critical temp. of the CO2 and is esp. 20-25 deg. C. Pref. the CO2 is circulated through an extraction stage, a caffeine sepn. stage and a moisture adjustment stage. The CO2 is vapourised in the caffeine sepn. stage. The difference in press. of the CO2 in the extraction and caffeine sepn. stages is pref. as small as possible, esp. less than 30 bar and partic. less than 10 bar. |
