abstract | Carbohydrates whose molecules contain at least one ketose group are dehydrated by treating them, without the addition of water, with a hydrogen halide, preferably hydrogen fluoride, which simultaneously acts as the solvent, after which the hydrogen halide is removed by evaporation, with the disaecharide anhydrides which have been formed accumulating. The products consist of saccharide group-containing dianhydrides whose molecules contain 2 saccharide rings which are linked to each other by 2 acetal bonds included in a dioxane ring, with at least one of the saccharide rings usually being an optionally substituted fructose ring which is linked to the dioxane ring by means of a spiran bond. The products can be used as foodstuff additives, in particular as constituents of sweeteners. They are not assimilated by the body and are non-toxic. |
