titleOfInvention | Process for decaffeinating green coffee |
abstract | A simple reliable process for decaffeination with a high degree of decaffeination is created, in which denaturation of the green coffee is avoided. In this process, the green coffee moistened to a high water content of 35 to 50% by weight is held for some minutes to some hours at a temperature of 20 to 80 DEG C under a gas atmosphere of 75 to 300 bar and, if necessary, is stirred during this. The pressure is then reduced abruptly or within a few minutes with avoidance of freezing to pc >/= p >/= 1 bar (pc = the critical pressure of the gas used). The green coffee is washed with the supercritical gas to give selective extraction of the caffeine and, if required, the process is repeated several times. The green coffee is then predried in a centrifuge and roasted. |
