abstract | A method of the concentration of acidic phospholipidsnis disclosed, which comprises a first step wherein lecithinnoriginating in a plant is treated with a solvent containingnfrom 85 to 100 % by weight of a lower alcohol and thenneliminating the solvent fraction containing said lowernalcohol to thereby give a phospholipid mixture, and a secondnstep wherein said phospholipid mixture is treated by using annaqueous solution containing 75 % by weight or less ofnethanol. n In the method of the present invention, the water-solublencomponents contained in the phospholipid mixturenobtained in the first step are efficiently removed in thensecond step. Thus a lipid mixture containing acidicnphospholipids at a high concentration can be relativelyneasily obtained from the lecithin originating in a plant.nThis lipid mixture is useful as an emulsifier or a tastenmodifier. |
