Disclosed are a method for producing a protein-containingnacidic food and drink that comprises processingna protein emulsion having a pH value that is higher thannthe isoelectric point of the protein in the emulsion at anhigh temperature to make the emulsion having a pH valuenthat is lower than the isoelectric point of the protein;nthe protein-containing acidic food and drink produced innthe method; protein-containing acidic food and drinkncontaining protein, fat and oil, and water-solublenpolysaccharide, in which the particles dispersed have anmean particle size of not greater than 15 µm; and anprotein-containing acidic drink containing protein, fat andnoil, and water-soluble polysaccharide, in which thenparticles dispersed have a mean particle size of notngreater than 15 µm and/or having a viscosity not greaternthan 20 centipoises (cPs). The protein-containing acidicnfood and drink is smooth, tasteful, palatable and has goodnstorage stability. |
