The present invention relates to the use of ozone for the synthesis of mucic acid. More specifically, the invention relates to a synthesis method using ozone, by means of which a high yield of mucic acid can be obtained, which can be produced in crystalline form, without having to use either an organic solvent or a catalyst, and with moderate power consumption. Mono-, oligo- and/or polysaccharides comprising galactose units or galacturonic acid, and galacturonic acid in particular, can be used as the starting product. |
