abstract | Procedure for flavoring and flavoring of potato chips and installation for the implementation of the same. # In a chamber two compartments (1, 2), superimposed, related by means of an intermediate draining sieve (3) are established, the upper compartment being (1 ) intended to receive the chips to be treated and provided with an outlet duct (8) with its corresponding stopcock (9), while in the lower compartment (2) an inlet duct (16) flows into which establish a filter (18), a compressor (19), a dehumidifier (20), a heater (21) and finally two reservoirs (26, 27) that supply essential oils and complementary fixative, with their corresponding stopcocks (28 , 29). By controlling the flow of air entering through the access duct (16), its temperature, the acting times and the proportions of the additives, the flavoring and aromatization is achieved in the upper compartment (1) of the chamber, without appreciate the existence or presence of any seasoning external to the potatoes themselves. |
