abstract | A production process of a concentrated and sterilized dairy product comprising the steps of: (a) performing a reverse osmosis concentration process on a starting material consisting of a milk or a liquid dairy product, and forming a more dairy product concentrated, in which the concentration process is carried out at a temperature not exceeding 7.2 ° C (45 ° F) using a membrane having a molecular weight cutoff of 100 Da, in which the starting material is subjected to a pressure of 3,103 kPa (450 psi) to 10,342 kPa (1,500 psi) and also in which the concentration process removes water from the starting material; and (b) performing a sterilization process on said more concentrated milk product by heating, wherein the sterilization process comprises a first heating stage that heats the most concentrated milk product from a temperature of approximately 7.2 ° C (45 ° F ) to a high first temperature between 79.4 ºC (175ºF) and 80.6 ºC (177ºF) in 45 seconds. |
