abstract A machine for cooking meat balls and similar paste products which are subject to damage by crushing if mishandled. Two semicircular baths are used; one having hot water, one cold water. Flat perforated blades are fixed at an angle to two driving hubs to form paddle wheels. One of these is immersed in each bath, closely following its contours, when revolving. The product, premoulded, is introduced onto a chute at one end, passes into the hot water, is heated and scooped up onto a short slipway between the two baths. It then passes through the cooling water in a similar manner. The meat balls float freely within the water and the blades may be formed of series of adjacent, parallel arms and fluid is continually transferred to and from the baths to maintain their temperatures.
