abstract | A process for producing a blue mold cheese from milk, and in particular pasteurized milk, wherein (i) the milk is subjected to an ultrafiltration process which separates the milk into an aqueous permeate and a retentate, until to obtain a retentate called "liquid prefromage" whose volume is reduced to at least 1/3 of the volume of the milk subjected to said ultrafiltration process; (ii) sowing said liquid prefromage with a ferment; (iii) rennet is added and coagulated to obtain a cheese; (iv) the cheese is pierced by piercing a plurality of holes or channels to allow the blue mold to develop, and in which process is added the blue mold either in the mass of the liquid cheese or in said holes or channels drilled in the cheese. |
