The invention relates to a food composition, gluten-free, for the preparation of a food dough to be lifted, characterized in that it comprises at least the following compounds: - starch flour, - salt, - pea protein, - sugar, - at least one thickening agent. The invention also relates to a process for the preparation of a gluten free breading dough and the use of the food composition of the invention for the production of gluten-free bread. |
