[Also in Divisions B1 and F1] Food e.g. cereals, meat or bone materials are continuously cooked or cooled by pumping the food through a pressure vessel 10 via inlet 13 and outlet 14 while passing hot or cold water through a jacket 12 and through a hollow shaft 11. When the food appears in a sight glass 19, valve 20 is opened and a reversed discharge pump 21 is started which maintains the pressure within the vessel 10. A pressure sensitive device 23 is installed within vessel 10 which controls the speed of the discharge pump 21 so that when the pressure exceeds a predetermined value the pump is slowed down and food is discharged into collection tank 22 passing through the pump in contra flow to the operation of the pump. The shaft 11 is rotated by a motor 16 and may have agitators 15 to move the food within the vessel. |
