abstract | A frozen beverage concentrate contains fruit pulp dissolved and dispersed in ice, which concentrate contains materials not derived from fruit and amounts of one or more pulp flotation agents sufficient to assist in supporting the pulp and maintaining it in suspension in a beverage produced by dilution of the concentrate. Pulp flotation agents: (1) a gum soluble in the water of dilution at a temperature of from 32 DEG to 70 DEG F., such as sodium carrageenate, proplylene glycol alginate, gum tragacanth, high viscosity sodium carboxymethylcellulose and guar gum, (2) a gum swellable in the water of dilution at a temperature of from 32 DEG to 70 DEG F., such as gelatine, agar, calcium alginate, furcellaran and potassium calcium carrageenate, and/or (3) the employment of fruit pulp in the form which acts as a pulp flotation agent i.e. it has at least 80 per cent of total cells as whole cells, the concentrate being free of fruit juice except for that adhered to the pulp. Orange, grapefruit, lemon, lime, tangerine, mango, papaya, grape and pineapple concentrates may be prepared. The concentrates may contain a sweetening agent such as sucrose, dextrose, invert sugar, fructose, mannitol, sorbitol, saccharine and cyclamates; edible acids such as citric, tartaric, adipic and fumaric acids and their alkali metal salts; tri-sodium phosphate; vitamins (specified); plastic fat encapsulated in gum arabic (clouding or opacifying agent); citrus oils encapsulated with sucrose, dextrose, corn syrup solids, gelatine, gum acacia or glycerol into particles coated with an anti-caking material such as tricalcium phosphate; acetaldehyde, ethyl butyrate and cotton-seed oil. There are disclosed preferred ranges of proportions for the fruit pulp and gum in beverages made by diluting the concentrates. |
