abstract | 1,143,578. Dry food mixes. UNILEVER Ltd. 9 June, 1966 [11 June, 1965], No. 24701/65. Heading A2B. A dry food mix contains cereal flour and 1-15% by weight of leavening ingredients comprising an alkaline earth metal carbonate (e.g. calcium carbonate) and an organic acid (e.g. citric or tartaric acid) which will react with the carbonate on the addition of water to generate carbon dioxide. The mix may be a self-raising flour or may be one used for making bread, biscuits, cakes, pizza or Indian products known as idli, dosa and vada. In the examples the mixes comprise (1, 2, 3) urid dal, rice flour, glyceryl monostearate, calcium carbonate, citric acid, sodium chloride and water, (4) wheat flour, salt, calcium carbonate and citric acid, (5) wheat flour, shortening, skim milk powder, sucrose, salt, calcium carbonate and citric acid and (6) wheat flour, sugar, shortening, dried egg powder, calcium carbonate, citric acid and milk. The batter obtained from the mix of Example (2) may be used to coat diced vegetables, cheese and onion shreds. |
