abstract 1478947 Dipeptide sweetening composition GENERAL FOODS CORP 25 Feb 1975 [7 March 1974] 7854/75 Heading A2B A dry, soluble sweetening composition comprises a sweet derivative of L-aspartic acid dipeptide in a carrier, wherein a major part of the dipeptide is in the form of discrete particles dispersed in the carrier or encapsulating agent, the remainder of the dipeptide being dissolved in the encapsulating agent, the composition having a density of at least 0.2 g/cc. The composition suitably contains 30-90 % of the dipeptide which is preferably the methyl ester of L-1-aspartyl-L-phenyl-alanine. The product may be formed by spray drying a slurry of the dipeptide in an aqueous solution of the encapsulant, suitably dextrin, to a moisture content of less than 5% by weight.
