| abstract |
A process for making a pizza base which comprises the steps of: (a) forming a portion of dough into the required shape; (b) leavening the dough; (c) coating at least the top portion of the pizza base with an edible substantially water-impermeable coating; and (d) baking the dough The coating is suitably a mixture of a glazing agent, such as Crystal Gum (Trade Mark) and an emulsion stabilizer such as N-Creamer 46 (Trade Mark). By applying the coating to at least the top of the pizza base, transfer of moisture from a topping subsequently applied to the top of the base is substantially prevented. |
