Cheese is pasteurized by forcing it through a chamber around heating means extending through the chamber, the heating means being so arranged that they serve to produce back pressure. As shown, the chamber 3 is fitted with closely arranged tubes 10 through which passes heated water or steam supplied from a pipe 12, the cheese being forced continuously through the chamber and around the tubes by a screw propeller 2. The circular tubes may be replaced by a cellular device or by channelled tubular members, and the propelling means may be driven at such a rate as to emulsify the cheese prior to the pasteurizing operation, a plate 20 for increasing back pressure being usually introduced when emulsification is desired. The hot water or steam escapes by an opening 15. Specifications 249,239 and 249,240 are referred to.
