abstract | <PICT:0378066/III/1> Emulsions, for example of a fat or oil such as butter in milk, are prepared by injecting the liquid or liquefied disperse phase into a body of the continuous phase flowing through a chamber 7, the injection appliance comprising means such as a conical valve 3, for example of chrome nickel steel, which spreads out the injected material into a conical atomized sheet. The valve 3 is adjustable in relation to its conical seat 2 by a screw-threaded stem 4 and a hand-wheel 5, and the rim 6 of the seating may be helically grooved to impart a whirling motion to the injected material. The continuous phase is admitted through a nozzle 9 which may be directed downwardly as shown or tangentially to the chamber surface. The emulsion is drawn off through a pipe 10 including flow-control means. The chamber 7 is divided horizontally or obliquely into two parts separable for cleaning and may be provided with heating means and glass inspection openings. In a modification the valve 3 is flat and engages a seating on a re-entrant portion of the chamber wall, the material being injected in the form of a flat atomized sheet at the centre of the chamber. |
