abstract | PROBLEM TO BE SOLVED: To provide a method for producing a target L-sorbitol with high purity and high yield by an environmentally friendly biochemical method. SOLUTION: Aureobasidium pullulans LP23 (NITE P-20) having the ability to produce L-sorbitol from L-fructose. In the process for producing L-sorbitol, which is converted to L-sorbitol by bringing a microorganism into contact with the raw material L-fructose, the microorganism belongs to the genus Oreobasidium having the ability to convert L-fructose to L-sorbitol A method for producing L-sorbitol, which comprises using imperfect bacteria.
