abstract An object of the present invention is to provide a method for reducing ethyl carbamate in alcoholic beverages (plum liquor liqueur, etc.) made from fruits (plum, apricot, peach, loquat, plum, cherry, etc.) containing cyan glycosides. And it is providing the novel liquor manufactured by this manufacturing method. A fruit containing cyan glycoside is left as it is for 3 days or more, water is added to a fruit containing cyan glycoside and left for more than 3 days, or a low concentration alcohol solution is added and left for more than 3 days. Further, the alcoholic solution is treated, and the leaving is preferably carried out under low oxygen conditions. Otherwise, alcoholic beverages with reduced ethyl carbamate are produced by a simple method according to a conventional method. [Selection figure] None
