abstract |
It is desirable to have an economical source of monatin, at least in part because of its sweetness characteristics. Accordingly, there is a continuing need to increase the efficiency of synthetic pathways, including biological multi-step pathways, such as monatin synthetic pathways. Methods and systems for increasing the production of monatin in a multi-stage equilibrium pathway are described. In some embodiments, the method comprises adding alanine to the reactor with one or more reactants and one or more enzymes to produce a mixture comprising monatin and one or more intermediates. The addition of alanine results in a less stable intermediate concentration and an increase in monatin concentration. [Selection figure] None |
