Disclosed herein are two-component enzymatic peracid generating systems and methods using such systems, wherein the first component comprises at least one enzyme catalyst having perhydrolysis activity, carvone. A second component includes a peroxygen source in water, including a blend of an acid ester substrate and a co-solvent. The two components are combined to produce an aqueous peracid formulation useful as a disinfectant or bleach, for example. Specifically, an organic co-solvent is used to adjust the viscosity of the substrate-containing component and substantially increase the solubility of the substrate in the aqueous reaction formulation without substantially losing the perhydrolysis activity of the enzyme catalyst. |
