The present invention provides a novel microalgal food composition comprising microalgal biomass processed into flakes, powder and flour. The microalgal biomass of the present invention has a low saturated fat content, a high monounsaturated triglyceride oil content, and can be a good fiber source. The present invention also comprises microalgal biomass suitable as a vegetarian protein source and as a good fiber source. Also disclosed herein are novel methods of formulating food compositions using the microalgal biomass of the present invention, including beverages, baked products, egg products, low fat foods and gluten free foods. Providing humans with food compositions incorporating the microalgal biomass of the present invention has the additional benefit of providing healthy ingredients while achieving satiety levels sufficient to reduce additional caloric intake. The present invention also provides a novel strain of microalgae that has been subjected to non-transgenic mutation methods sufficient to reduce the coloration of biomass produced by the strain.
