abstract A novel polyol oxidase is provided. A polyol oxidase derived from a microorganism belonging to the genus Arthrobacter having the properties described in (a) to (f) below. (A) The polyol of the substrate is a sugar alcohol in which the OH groups at the 2-position and 3-position of the polyol have an L-erythro structure or an L-threo structure. (B) The action oxidizes the 1-position OH group of the sugar alcohol in the presence of oxygen to produce aldose and hydrogen peroxide corresponding to the sugar alcohol. (C) The apparent molecular weight measured by SDS-PAGE is about 45 kDa. (D) The stable pH is 6.0 or higher, and the optimum reaction pH is 7.0 to 10.0. (E) The working temperature is 60 ° C. or lower, and the optimum reaction temperature is 50 ° C. (F) Substrate specificity is in the order of xylitol, D-sorbitol, L-talitol, galactitol, L-arabitol, D-mannitol, D-arabitol, D-talitol. [Selection] Figure 13
