abstract PROBLEM TO BE SOLVED: To deform a container, cause poor internal pressure, while softening the target food and maintaining water retention even when the target food in contact with a solution containing sodium hydrogen carbonate is heated in a sealed state. Provided is a method for producing a packaged food product in which the seal is less likely to recede and break. SOLUTION: A contact step A in which at least a part of the target food material is brought into contact with a solution of an alkali metal hydrogen carbonate, a heating step B for heating the target food material after the contact step A, and a target food material after the heating step B are filled. A method for producing a food in a container, comprising a sealing step C for sealing the containing container and a sterilizing step D for heating and sterilizing the containing container after the sealing step C.
