abstract PURPOSE: To prepare tea having excellent nutrient value, taste, flavor and stabilized quality and resistant to oxidative deterioration by decomposing tea leaves with an enzyme, extracting the decomposed leaves, freezing the obtained concentrated tea in an oxygen-free atmosphere and packaging the product in a specific manner. n CONSTITUTION: The objective tea is prepared by extracting tea leaves with a decomposition-treatment enzyme such as cellulase, freezing the obtained concentrated tea to a size of preferably 5-15g in an oxygen-free atmosphere formed e.g. by bubbling nitrogen gas and packaging the frozen tea cube with an oxygen- impermeable film such as polyvinylidene chloride film. The tea is served by putting the frozen cube into a tea-cup and dissolving with hot water or cold water. n COPYRIGHT: (C)1990,JPO&Japio
