abstract (57) [Summary] [Purpose] A water-soluble polysaccharide powder that is substantially free of fungi can be produced safely, easily, and reliably, and it is not possible to add a preservative or by heating. A water-soluble polysaccharide powder that can be effectively applied to foods and toiletry products that cannot be sterilized, and a method for producing the same. [Composition] Any step from extraction to drying in the manufacturing process of the water-soluble polysaccharide powder, in which the water-soluble polysaccharide is extracted from the water-soluble polysaccharide-containing material, the extract is filtered, and the filtrate is dehydrated and dried. In the case of adding an oxidizing bactericidal agent, or by dispersing the water-soluble polysaccharide powder in a poor solvent in which the water-soluble polysaccharide powder is insoluble, in a state in which the water-soluble polysaccharide powder is substantially insoluble A water-soluble polysaccharide powder which is substantially free of fungi such as general viable bacteria, thermophilic bacteria, yeasts and molds is produced by contacting with an oxidative germicide and performing heat treatment.
