abstract | (57) [Summary] [Problem] To provide a heat history determination method and a heat history display label for qualitatively and quantitatively determining an integrated value of a temperature and a continuous time, that is, a heat history, received by heating or generated by heat generation. I do. SOLUTION: The property that the thermal denaturation of a chemical substance is quantitatively changed and accumulated in accordance with the thermal history is utilized, and the amount of the change is determined from one or more denatured or undenatured chemical substances after heating. Changes in the intensity of the emitted fluorescence and changes in the shape of the fluorescence spectrum are measured, and based on the relationship between the previously measured changes in the intensity of the fluorescence and the wavelength shift of the fluorescence spectrum and the thermal history, the change in the intensity of the fluorescence and the wavelength of the fluorescence spectrum are measured. The thermal history of the object to be heated is qualitatively and quantitatively determined based on the shift amount. In addition, a chemical substance that causes a change in the fluorescent property by heating is used as a heat history display agent of the heat history display label. |
