PROBLEM TO BE SOLVED: To provide an improved method for producing N-alkoxycarbonylated, N-alkenyloxycarbonylated or N-arylalkoxycarbonylated amino acids. SOLUTION: Amino acid, amino group (or imino group) An amino acid derivative in which is present in a free state or a peptide in which an amino group (or imino group) is present in a free state, and a peptide represented by the general formula (1): (In the formula, R is a linear or branched lower alkyl group having 1 to 6 carbon atoms, a linear or branched lower alkenyl group having 2 to 6 carbon atoms, or aryl having an alkylene group portion having 1 to 4 carbon atoms. A dicarbonate compound represented by an alkyl group) is reacted with water in the presence of an inorganic base under the addition of a phase transfer catalyst, and after the reaction, the reaction mixture is neutralized with an acid.
