abstract The present invention relates to difructose dianhydride III (DFA III), ie, an indigestible disaccharide (di-D-fructofuranose-) in which two molecules of fructose are linked at 1, 2 '; 2, 3'. The method of producing DFA III crystals is characterized in that the pH of the solution containing 1, 2 ′; 2, 3 ′ dianhydride) is 5 or more, preferably 5-8, more preferably 6-8. According to the method of the present invention, DFA III can be industrially produced without reducing the crystallization rate even if crystallization is carried out in the circulation system. In this case, the total content of fructose in the (crude) crystallization mother liquor is further increased. The effect is further enhanced when the content is 5% or less per solid and the fructose content is 5% or less.
