abstract It aims at heating to uniform temperature without stirring a large-capacity cooking container for business use, and performing drive control of heating cooking precisely.n n n In order to achieve the above object, a plurality of nozzles are distributed and disposed in an airtight cooking vessel free of pressure and pressure, and a cooling water supply source, a hot water supply pipe, a seasoning liquid supply pipe, a steam supply pipe, and an overheating supply pipe are connected to the nozzles. It connects through a means which switches a steam supply line and a heating nitrogen supply line.n n n Then, the heated seasoning liquid or the like is ejected directly from the nozzle to the food in the cooking container, collected at the bottom of the cooking container, reheated, and fed back to the cooking container.n n n The cooking vessel is equipped with temperature sensor, temperature sensor, and pressure sensor, and is supplied with sequencer control program based on the output of these sensors to supply seasoning liquid, hot water, steam, superheated steam, superheated nitrogen or cooling water sequentially and adjust the pressure. Cooking sterilizes the ingredients of cooked containers.
