abstract Food waste drying apparatus and method are disclosed. According to an aspect of the invention, the food waste drying apparatus, a hopper receiving the food waste; A fermenter including microorganisms for fermenting food waste fed from a hopper; Decompression unit for reducing the pressure inside the fermenter; A heating unit for supplying a heated gas to the fermenter so that food waste is heated; A circulation pipe returning the exhaust gas discharged from the fermentation tank to the heating unit; And a stirring unit for stirring the food waste inside the fermentation tank, the microorganism includes an aerobic microorganism and anaerobic microorganism, and the stirring unit includes: a driving motor; A shaft rotated by a drive motor; A first stirring blade coupled to the shaft in a direction in which the shaft extends and having a triangular cross section; And a second stirring vane interposed between the first stirring vanes and having a parallelogram cross section, wherein the first stirring vane and the second stirring vane are orthogonally disposed about the shaft, and the pressure reducing unit has a pressure of 360 mmHg in the fermenter. A food waste drying apparatus is provided, wherein the inside of the fermenter is depressurized so as to maintain at least 460 mmHg, and the heating unit supplies a heated gas to maintain the internal temperature of the fermenter at 50 degrees Celsius or more and 80 degrees Celsius or less.
